1、豆腐皮是中国传统豆制品,是用豆类做的一种食品。在中国南方和北方地区有多种名菜
2、 今天老刘就来分享一下“干锅豆腐衣”做法,喜欢的朋友可以先收藏,有空自己试一下。
3、下面开始介绍所需要的食材:
豆腐衣、秀珍菇、鸡腿菇、青红椒、洋葱、小米辣、大蒜、生姜、五花肉、生抽、老抽、蚝油、白糖、味精
4、豆腐衣用热水给它泡一下,把豆腐衣泡软,水温在80度左右,泡个20分钟。秀珍菇撕成小块,鸡腿菇切片,一起摆在盘中,洋葱切丝抖散后直接放在干锅中垫底,青红椒去蒂去籽以后切菱形斜片,蒜薹切去老根再切小段,一起放入盘中
5、豆腐衣泡好以后放在案板上切成小块,五花肉切成片,再准备个白肉板切成片,小米辣去蒂以后切辣椒圈,生姜蒜子分别切片。锅中烧上开水,放入秀珍菇和鸡腿菇焯水,锅开后捞出沥干水分备用
6、热锅倒油,放入五花肉和白肉板煸出油脂,再放入小米辣、蒜片、姜片爆出香味,再放入蒜薹和青红椒一起翻炒,然后把菌菇也放进去,再次翻炒均匀,最后放入豆腐皮一起翻炒,然后转小火开始调味
7、先淋入少许老抽上色、生抽增鲜、料酒锅边淋入去腥、蚝油、盐小半勺、两小勺白糖提鲜,再放入一勺味精,不喜欢的可以不放,然后开大火翻炒入味,多炒会把里面水分炒干吃起来更香,就可以出锅装入垫有洋葱丝的干锅中,可以开吃了
8、豆腐皮性平味甘,有清热润肺、止咳消痰、养胃、解毒、止汗等功效

4、豆腐皮放入凉水中泡软,洋葱切丝放入干锅中垫底,摘去叶子的芹菜切段放入盆中备用。蒜薹切小段放入盘中,线椒去蒂切斜段,丝瓜切条,放在清水中这样不会氧化变黑
5、大红椒去籽再切菱形斜片。猪瘦肉切片备用,泡发好的豆皮切菱形斜片备用,蒜子生姜切片
6、热锅倒油,放入肉片煸香,变色以后放入姜蒜片爆香,再淋入生抽、蚝油、一勺白糖翻炒入味。再放入豆腐衣翻炒,盖上盖子小火烧三分钟
7、再放入所有配菜翻炒均匀,再放入盐一勺,一勺鸡精,翻炒断生就可以出锅了

豆腐皮这样做实在太好吃了,我家隔三差五吃一次,比红烧肉还解馋大家好,这里是胖叔的美食。豆腐皮是用大豆 *** 出来的一种豆制品,小孩吃能提高免疫能力,促进身体和智力的发展。老年经常期食用可益寿。特别对孕妇产后期间食用既能快速恢复身体健康,又能增加奶水。豆腐皮还有易消化、吸收快的优点。是一种妇、幼、老、弱皆宜的佳肴。
豆腐皮在南方和北方都有很多中名菜,今天我要和大家分享一种简单的做法,这样做出来下酒又下饭,非常的开胃,厨房小白也能轻易地学会。
【凉拌豆腐皮】
【食材】:豆腐皮
【配料】:大蒜,炸花生,红椒,木耳,香芹
【调料】:盐,白砂糖,生抽,芝麻香油,辣椒油
— —【开始 *** 】— —
①:首先把干木耳放到水里侵泡,豆腐皮切成细丝,香芹一小把切成段,红椒一个切成丝。(这一步豆腐皮可以切细一下容易入味,红椒要去掉里面子籽,切丝是配色用的)
②:木耳泡发后把它也切成丝备用。接下来调一个料汁,大蒜几粒拍扁后剁成蒜末放到碗里,加入一勺盐,一勺白砂糖,适量的生抽,一勺芝麻香油,一勺辣椒油搅拌均匀备用。(如果不会做辣椒油的,建议在市场卖凉拌的地方可以购买)
③:锅里把水烧开,先把木耳放进来烫一会,然后放入切成丝的豆腐皮,加入一勺盐入一下底味,焯水一分钟后把木耳和豆腐丝都捞出来沥干水分。(这一步加盐处理入底味还可以使豆腐丝不容易碎)
④:锅里水再次烧开加入一点食用油,然后放入香芹段和红椒丝快速焯水20秒在捞出沥干水分。(香芹和红椒丝焯水时间一定不能太久,不然会影响口感,不脆了)
⑤:准备一个大一点的盆,把沥干水分的豆腐丝,木耳,香芹,红椒丝都放进来,然后加入炸过的花生米和调料搅拌均匀就可以装盘食用了。(花生米和辣椒油一样,可以在菜市场卖凉拌的地方购买,省去自己炸的烦恼)
这道美味的“凉拌豆腐皮”就做好了,香辣爽口,下酒又下饭,是一道非常好吃的开胃菜,食材的搭配营养丰富,做法简单易学,喜好就赶紧收藏起来试试吧。
