网上看到网友在吃欧姆蛋,以为很高级, 实际做法确实也高级,今天复刻一�?/p>
首先准备两个鸡蛋,蛋清蛋黄分离,想吃甜的可在蛋清蛋黄里加少一点白糖,蛋清里再加一点白醋或柠檬汁,我家正好有柠檬,我挤了几滴。然后把蛋清用打蛋器打发,先低速打成大泡,然后再用�?速打发,打发的过程和做蛋糕打发过程是一样的,打到出现个小尖尖就好了
然后再把蛋黄也打发均匀,取一半打发好的蛋清和蛋黄混合,最后把所有蛋清倒进蛋黄里翻拌均匀,记住不能搅时间太长,否则气泡会消失。这一步和做蛋糕是相似
第三步,找个不粘锅,锅底刷少量黄油,没有黄油可用猪油、植物油代替,我加了自己熬的猪油,香香的。然后用小火把锅烧热,把搅好的鸡蛋放到锅里,抹平,盖个盖子加�?0秒到1分钟。记得全程用小火。鸡蛋煎好后,慢慢地把煎好的鸡蛋取出来。我的平底锅不好用了,有点粘了,恨不得扔掉�?/p>

煎好的鸡蛋慢慢取来盛盘,最简单的加点番茄沙司。复杂点的,切点洋葱沫,加点咖哩炒一下,再加点番茄沙司,然后淋到煎好的鸡蛋上,看着也流口水了�?/p>
这样煎出的鸡蛋软软的,还可晃动。超级好吃,吃的时候可夹到面包里,两个鸡蛋分分钟吃光�?/p>
