看张一山吃火腿肠,满脸的享受,小小年纪演技就这么好! 老饭骨大爷的国宴菜:香菇百花瓤菜心,色香味俱全“享受”和“想瘦”总是两难全。肉肉吃多了,不安分的胃就开始试图从素菜里寻求一些平衡。人们经常在菌菇里找肉味,香菇油菜就非常合适。香菇油菜是常见的家常菜,可能很多人都吃过也做过,这道菜色香味俱全,营养价值丰富。
今儿老饭骨大爷要教大家高阶版的素菜吃法:国宴菜【香菇百花瓤菜心】,国宴菜也能家常吃,荤和素都在这道菜里得到了均衡,发挥到了极致。
食材准备:香菇、菜心、虾仁、肥膘、火腿、葱姜。
调料准备:盐、老抽、蚝油、黄酒、白糖、白胡椒粉、玉米淀粉。
1、香菇处理:之一遍先洗,洗完以后,泡凉水回软。都处理干净后,在锅里加入少量油,两截葱,两片姜,把葱姜煸煸,倒入处理好的香菇,加蚝油(增加香菇的香气),加入水、酱油、糖(提鲜)、盐要少加、白胡椒、黄酒(关键)。香菇煨一煨,倍儿香。如果着急的话,改蒸,不着急的话可以直接煮。在这里老饭骨大爷选择的是蒸。等锅开了后,蒸上过调料的香菇。
小窍门:香菇选小的,肉厚。
2、菜心处理:水开后把菜心绰软,关火冲凉,让菜心保持翠绿,用毛巾吸干菜心的水分。
小窍门:油菜选矮脚黄,短粗,头儿大,肉厚的,吃起来面乎。
注1:不搁油,搁油瓤馅瓤不上去。
注2:国宴菜很标准,菜心要吸干水分,尤其是菜心头的这部分。不吸干净它不好粘,放淀粉馅儿上去容易掉下来。
3、金华火腿:蒸上,大约一小时,蒸好后不用肥肉,只用瘦肉,将火腿瘦肉切成末儿。
小技巧:火腿更好的就是上腰峰,那块的肉特别红。真的好火腿,那真是好几年呐。
注:为什么加火腿末,因为这菜很清淡。当你吃着一点火腿末的时候,火腿的这种咸香,既有鲜味又有香味。
4、虾的处理:将虾仁洗干净,用干毛巾把虾仁表面的水分蘸干,挑出虾线。一拍一剁锤虾胶,刀背厚的话,可将刀背翻过来捶。
注1:瓤馅可以用鸡馅,鱼馅和虾馅。
注2:粤菜的百花馅粗一点,淮扬菜要细一点。
5、剁肥膘:因为现在的虾大多是养殖虾,胶性蛋白质不太丰富,砸点肥膘,增加虾的香气。
6、打馅儿:将剁好的虾和肥膘放入盆内,加入盐、胡椒粉、葱姜酒水、半个蛋清和玉米淀粉,顺时针打。
注:为什么加蛋清?现在的虾胶有时候打出来不脆。搁点蛋清,增加它蛋白质的凝固,打上劲儿。
7、挤虾胶:挤这丸子手就有准儿,大小都一样才好看,也考验技术。挤好后用小板抹点油,在家里用勺也可以,让丸子光滑饱满。
8、在虾胶丸子上加火腿末(画龙点睛):火腿搁点黄酒、葱给蒸一下,蒸完后把肥的去掉,找一个小罐,放点植物油给它封上,什么时候用,把油一冲就可以接着用。
注:火腿一定要蒸熟。
蒸菜:蒸的时间很短,三分钟后开锅。
10、香菇勾芡:将蒸好的香菇倒入锅中,葱姜挑出去(吃其味不见其物),加入水淀粉,出锅。
11、勾芡汁:明油亮芡,还有一白汁(鸡汤),任何细节都不能少,没有鸡汤可用纯净水代替。依次加入盐、糖、胡椒粉、咸鲜口的汁,米汤芡,玻璃芡,明油,有鸡油来点鸡油,鸡油提亮,出锅。
注:白汁用清鸡汤。
12、浇汁:水见芙蓉,先浇白汁,浇完这汁水这虾才能亮,,菜心上也给浇汁。
13、摆盘讲究:香菇的帽一定朝上。
美食点评:虾Q弹,油菜碧绿,香菇入味,三种食材合为一体,又有层次感。菌类的菌中鲜,虾有海中鲜,还有油菜的爽脆。

非常美味的火腿菜饭,经典操作,一学就会,带您回味儿时的味道大家好,今天笔者要为您介绍的美食叫做“火腿菜饭”。最近看了很多关于做米饭的视频,像什么鸡翅焖饭,排骨焖饭,咖喱鸡饭等等,之中有很多都是笔者感兴趣的“饭食”。当然啦,之中最让我感兴趣的就是今天的这道“火腿菜饭”。其实在小时候,青菜很家常,家家后院都会重些,猪肉也没有现在这么的“贵”,各家各户都会时不时的煮些猪肉菜饭来调剂下一直吃白米饭的味道。对于而是在灶台前烧着木柴,闻着锅中的肉香,那种流口水的味道一直在脑中徘徊。那么在接下来的烹饪过程中,笔者会以火腿(方肉肠)代替猪肉(主要是为了煮制方便),为您呈现儿时的家味美食。
准备原料:青菜5-6棵,方形速食火腿1个,大米自备。辅料准备蚝油,盐,鸡精,鲜酱油即可。首先把青菜洗净切成细条(横切就行),火腿切丁备用。
之一步:锅中热油5成热,把切好洗净的青菜丝倒入锅翻炒1分钟。
第二步:随后往锅中加入300毫升的左右的温水(配比煮米饭的水量),待水烧开后,加入少量的鲜酱油,适量的蚝油,鸡精,盐后,适当搅拌煮1分钟关火。
第三步:把煮好的青菜汤一并倒入淘好米的电饭锅中,随后在上面撒上火腿丁,盖上盖,按正常的煮饭模式煮制即可。
第四步:煮好米饭后,您可以用饭勺充分的把青菜、火腿、米饭充分 的搅拌,若是您想增加米饭更浓郁的香味,可以适当的撒些芝麻油拌匀即可食用。
