鱼在鱼铺就已经杀好了,想要鱼汤好喝无腥味,那么首先就要去鱼腥。
洗鱼的时候一定要将鱼腹部里面的黑膜全部扒出来,以及里面的黑骨血也要去除干净,这样可以有效的去除鱼腥味。
全部抠掉之后,我们用水彻底的冲洗干净。洗干净后,我们现在用剪刀将鱼身上面的鱼鳍、鱼尾全部剪掉。
鱼尾里面含有一些寄生虫,所以一定要剪掉。
鱼的表面摸起来黏黏糊糊的,我们要用刀将表面的这一层粘液刮下来,这个黑乎乎的黑色粘液也是腥味的重要来源之一。
两面都要尽量的刮干净,接着再放到水下面,反复的多冲洗几次,清洗干净,这样一条干净的鲫鱼就算收拾好了,接着在鱼的两面分别划上三刀。

煎鱼的时候要用小火慢慢的煎,将鱼放下去,把鱼煎至微黄,这个过程我们先不要着急去翻动,先将鱼的一面煎至定型,我们再来翻动。
翻过来之后,将另一面也煎至微黄,煎至定型。两面都煎好后,我们现在用铲子将鱼打散,直接用锅铲或者是勺子将它打碎,充分打碎之后,我们再翻炒一下,把鱼的香味炒出来。

下面准备半截大葱直接切成段,一块生姜直接拍碎。

我们再准备一个漏勺,将熬煮好的鱼汤过滤一下,过滤到砂锅里面看一下,还过滤出了鱼刺这么长一根,将漏勺里面的鱼渣子也倒掉了,经过两次过滤,这样就万无一失了。
可以看到这个汤色非常的奶白,看起来就像牛奶一样,现在把焯好水的萝卜丝倒进鱼汤里搅拌两下。
下面来简单的调个味,加一勺盐,一勺味精提鲜,胡椒粉去腥,再搅拌,搅拌让调料融化在汤里面。
