黄焖鸡又叫香煲鸡,很多人都喜欢它,最为作为现在很是流行的快餐,软烂入味的鸡肉,浓厚的汤汁,泡上一碗大米饭,那种满足感太过瘾了。
市面上很多的都是用鸡腿,放香菇,金针蘑什么的,但是如果用 *** 黄焖鸡的 *** , *** 东北地方的特有食材,会碰撞出怎样的美味佳肴呢?

如何选购榛蘑:
选榛蘑最重要的就是闻香气,如果干榛蘑本身闻起来味道很淡的话,做出来味道总是差点意思,得选本身香气比较浓郁的才好。别的倒没有什么特别好注意的,反正也假冒不出来。
做这个菜本来想选用小笨鸡了的,但是没有,所以选用了和小笨鸡口感差不多的蛋鸡
原材料准备:
1.蛋鸡一只
2.榛蘑
3.土豆
4.红绿尖椒
5.黄豆酱
*** 过程:
1.将小鸡剁成大块,将鸡肺子摘除。
2.泡点小榛蘑,土豆奔大块,大块葱姜,红绿尖椒菱形块。
3.将剁好的鸡块用啤机和酱油搅拌,腌制一下!
4.锅烧生豆油,烧至冒烟,将腌制好的鸡块下入锅中。
5.大火慢慢炒,将鸡块的水分炒干,外面带点小黄嘎嘣。
6.鸡块炒好后下入好用是炒糖色
炒至上色,下入黄豆酱,大块葱姜,炒香。
7.加入开水,不要加凉水,要不小鸡不容易炖烂。
8.加泡好的榛蘑,入盐,白胡椒粉调口。不用任何多余的调料。少放点老抽靛色。
9.盖盖小火炖90分钟。到时将炖好的小鸡,再倒入砂锅,加入土豆再炖12分钟
10.土豆熟了后,加入青红尖椒块,炖出香味后即可!
地道东北味,嘎嘎香,比市面上的好吃太多了,有机会大家完全可以试验一下哦,绝对不会让你失望。
注意事项:
- 小鸡要选择东北的小笨鸡,或者一年多的蛋鸡,这样的鸡吃着才香。
- 用的是东北野生榛蘑,也可以用其他的蘑菇代替,比如香菇,口蘑,金针蘑
- 小鸡的软烂程度根据个人口味增减,土豆要后下,不然炖没了哈哈
- 炒鸡块的时候如果没有炒好的糖色,料酒将鸡块盛出,再重新炒糖色,下小鸡等一系列原料
- 在下入黄豆酱的时候,可以加点郫县豆瓣,辣椒等,因为家里有孩子,所以一般的菜我都不会放,但是不影响味道,但是加盐的量一定要注意。
- 最后用不用砂锅都无所谓,就是要一个感觉,

原料:
鸡腿2斤(把鸡腿放进清水内浸泡下血水备用)、海鲜酱50克、蚝油40克、老抽酱油15克,味精鸡精适量,不喜欢可以不放、料酒20克、十三香1.5克、盐4克、色拉油5克、姜片8克、清水450克 、青红辣椒片适量【喜欢辣一点的可以加线椒】
(以上配比是 *** 2斤鸡腿所用的比例, *** 出来味道刚好,我们操作的时候比例不要搞错了,否则味道会有差异)

1、把清洗好的鸡腿改刀成块,剁好的鸡块下入锅内,加入以上调料和酱汁 搅拌均匀【如果是商业操作,建议把以上调料和酱汁混合好,2斤鸡肉用混合到的酱汁140克,这样更有效的提高出餐速度】
2、最后加入清水,把高压锅上火,盖上盖子,放上气阀,上汽之后计算时间:压5分钟。
3、5分钟之后关火放气,打开高压锅盛入砂锅内,开大火收汁,加入青红椒片,收汁制汤汁粘稠即可搭配米饭上桌。
