我07年开始写美食博客,到现在出版了第10本美食书,每个阶段的状态和心情都很不一样!
回忆起我的之一本书,那时候的感觉比初恋还好,写了几年的美食,之一次能以书籍的形式销往全国,让我激动了好久好久!
而如今已有很多出版社跟我约稿,我反而变得更加谨慎了,不想出书或出不了好书的时候,我都尽量不去做这件事!而时隔2年再次出书,真的是我积累了很久的成果。
这本书从实用角度来说,是一本真正的好书,每道食谱都有详细步骤,另外也新增了二维码,手机扫一扫就能观看教学视频,让大家更好懂,更好学!
如果没有这两年下来的积累,我根本没办法提供给出版社这么多美食视频,更加不会有如此丰富的内容呈现给我的忠实粉丝们,这其中光是花费在内容 *** 上的成本,就有几十万了~

【食材】
草鱼1条(约2斤) / 鸡蛋2个
面粉200克 / 淀粉50克
料酒、生抽、老抽、盐、白糖适量
葱、姜、蒜、干辣椒、豆瓣酱适量 < 做法 >

草鱼在鱼市上让卖家帮忙处理好,拿到家后清洗干净,然后刀顺着鱼脊骨慢慢往鱼头那头划过。(洗鱼的时候里面的黑膜要彻底去除干净,这样鱼才不腥。)

鱼头这里切下,一片完整的鱼肉就已经取下来了。

把鱼翻一面,用同样的 *** ,片下另外一片鱼肉。去掉鱼腹部的大刺后,取一块鱼肉,从鱼尾巴那头起刀,斜着把鱼肉片成鱼块。

用料酒,盐,腌制20分钟。

大碗中加入面粉、鸡蛋、淀粉和盐。

加凉水搅拌成无颗粒的面糊。(面糊不能太干,也不能太稀,粘稠度要以能粘住鱼块为宜。)

将腌制好的鱼块放入面糊中,均匀裹上面糊。

锅中放油,八成热的时候,将鱼块放入油中。

中火炸至两面金黄。

用漏勺捞出控油。

锅留底油,加入姜片、葱段、干辣椒、蒜瓣、豆瓣酱爆香。

再加入适量热水,倒入料酒、生抽、老抽烧开。

放入炸好的鱼块、加入白糖。

大火烧开后用汤勺舀去浮沫,盖上锅盖转小火炖20分钟。

最后用大火收浓汤汁,撒少许葱花即可出锅。好吃的红烧鱼块就做好了
TIPS
1 / 鱼块要先腌制进行去腥处理和入底味,这样煮出来才不腥。
2/ 烧鱼的中途,不时的将汤汁淋在鱼的表面或者翻面,可以使鱼肉更加入味。

★红烧鱼块★
红烧鱼块属于沪菜,流传至全国,成为一道老百姓饭桌上的家常菜。一般以草鱼为原料 *** ,配上少许干辣椒,酱油烹饪,鲜香味美。
小的时候其实不是很喜欢吃鱼,因为吃鱼很麻烦,还要挑刺儿,不小心还会被刺扎到。妈妈为了让我多吃点鱼,对身体有好处,就会变着法的做各种鱼给我吃。印象最深的就是小时候家里经常做带鱼,红烧带鱼,炸带鱼,因为那个年代带鱼比较常见,其他鱼平时也买不到,也没有卖的。然后上学带饭的时候,妈妈会先把带鱼里边的刺先挑出来,然后把纯鱼肉给我带饭盒。现在回想起来,真的是好幸福呀,妈妈真的是不容易,好辛苦。现在记忆里还有灯光下妈妈在厨房给我准备饭盒挑鱼刺时的背影,印象太深刻了。
后来生活条件慢慢的好了,各种物资也丰富了,能买到其他的鱼,然后就开始换成爸爸做鱼了。爸爸是家里的大厨,厨艺了得,经常给我们换着法的做各种好吃的东西。什么锅包肉啊、糖醋鱼呀,红烧鱼块啊,炖大鹅呀,都是童年记忆中老爸做出来的绝顶美食。
现在自己也为人夫为人父了,也是经常给家人换着法的做各种吃食,希望大家有食欲,希望老爸老妈健健康康的,希望老婆漂漂亮亮的,希望小朋友长得壮壮的。
【主要食材】
胖头鱼、淀粉、料酒、姜、葱、蒜、食用油、其他调料
【食材介绍】
胖头鱼,红烧鱼块一般都是用草鱼做的,但是我嫌草鱼刺儿多,就改用了胖头鱼。胖头鱼的肉质比较松软,而且刺比较少,适合家里有小孩儿或者有老人的做来给家人吃,防止小孩儿和老人扎鱼刺。
【 *** *** 】
· 葱切段,姜切片,备用。
· 将切好的鱼块或者买现成的鱼块,用姜片、盐、料酒腌制20分钟。盐要少放。
· 腌好后,加入2勺淀粉,抓匀。
· 油温六成热,下入腌制好的鱼块,下锅炸。炸到表面金黄,捞出备用。
· 锅内留底油,葱段爆香,加入生抽、老抽、盐、糖、料酒。
· 下入炸好的鱼块,翻炒几下,表面均匀粘上调料颜色。
· 加清水,开锅后炖10分钟,入味。
· 大火收汁。
· 出锅盛盘,撒上白芝麻。

【小贴士】
· 腌鱼的时候要少放一些盐。腌制的时候,如果盐放多了,鱼肉肉质会变硬,另外后面炖鱼的时候不好把握盐的用量。
· 现在超市都有卖现成的冷冻鱼块,也可以买鲜鱼的时候让店家帮忙切一下,以免刀工不好片鱼肉时受伤。
