用料- 鲜香菇 10朵
- 面粉 50克
- 生抽 2大勺约30克
- 老抽 1小勺约5克
- 蚝油 1小勺约5克
- 水淀粉 1大勺约15克
- 糖 1小勺约5克
- 小米椒 3个
1、我们做素鲍鱼的原料就是鲜香菇啦,先洗净去掉梗,然后再切十字形花刀。
2、切好后,放到开水锅里烫一下,然后捞到凉水里泡一下。这样处理后,香菇会更紧致,吃起来更像鲍鱼。
3、用牙签把香菇这样穿一下,固定形状。
4、放到面粉盆里打个滚
5、然后放到已经烧热到160的油锅里,炸到两面金黄,捞出来控油备用。
6、接着我们来做酱汁,取一个小奶锅,倒入生抽、老抽、白糖、小火烧至冒泡,再倒入1大勺水淀粉,熬到酱汁浓稠,最后撒入小米椒碎就完成啦。
7、把做好的酱汁淋到香菇上,开吃吧~跟真鲍鱼的口感很像呢。

今日美食——蚝汁鲍鱼
鲍鱼味道鲜美,营养丰富,被誉为海洋“软黄金”,前几天正好遇上超市搞活动,8元一只,赶紧入手了6只新鲜的鲍鱼,用一个很简单的做法,出奇好吃,这个做法同样也适合其他贝类海鲜。

鲍鱼:6只
大蒜
配料
食用油、老抽/生抽、蚝油、白糖
- Step 1 -
先来处理鲍鱼,用小刀把鲍鱼肉整个剔出
取出内脏,把鲍鱼和壳再次洗净
▲放盘中备用;
- Step 2 -
把处理好的鲍鱼放入开水蒸锅中
▲盖上锅盖大火蒸8分钟;
- Step 3-
这时来做酱汁,先用压蒜器压出适量蒜蓉
然后再锅中放1勺油,放入蒜蓉爆香
蒜蓉出香味后放入2勺蚝油,半勺老抽,1勺白糖
加少许清水,搅拌均匀
▲酱汁煮浓稠就可以了;

鲍鱼蒸8分钟后关火,再焖2分钟

1、“鲍鱼素称“海味之冠”,是珍贵而营养价值颇高的食药兼之海产品,和五花肉一起红烧,滋味相互渗透,浓油赤酱,咸鲜入味
2、 今天老刘就来分享一下“鲍鱼红烧肉”做法,喜欢的朋友可以先收藏,有空自己试一下。
3、下面开始介绍所需要的食材:
五花肉、鲍鱼、生姜、料酒、白糖、老抽、生抽、蚝油、海鲜酱、小葱
4、先把鲍鱼用刀挖一下,把里面的内脏去除,然后给它清洗干净,再把鲍鱼打上十字型花刀,这样烧制时更入味。再把五花肉改刀成小块,生姜切片。切好的五花肉放入冷水锅中焯水,再放入姜片和料酒去腥,锅开后撇去浮沫,然后捞出清洗干净
5、锅中倒入多一些的食用油,油热后重新到回油缸中,锅中再次倒入冷油,放入五花肉煸一下,把五花肉的油脂煸出来,煸出的油脂,多余的盛回油缸中烧别的菜,这样烧好的红烧肉不会太油腻,再放入姜片爆香
6、锅边淋入少许料酒去腥、老抽上色、生抽增鲜、蚝油、海鲜酱、三勺白糖,大火翻炒入味,再放入开水,盖上锅盖,大火烧开,中小火慢炖20分钟。
7、烧的时间到时,再把鲍鱼放进去,盖上锅盖小火烧五分钟,时间到,汤汁收的差不多就可以出锅了装盆了,再撒上葱花点缀就可以开吃了
