分享一下孩子们爱吃的馄饨馅调制 ***十八年前,那时候姐姐还没出生,我和家属刚结婚不久,家属是个做饭小白,我的水平比他好一点,但仅限于能吃,好不好吃的不在我的控制范围内�?/span>
我记得我之一次自己拌馄饨馅,是按照记忆里我的妈沫做的 *** ,把肉剁了,加盐加酱油,搅拌一下,再剁点菜进去,再搅拌一下,馅料完工�?/span>
味道怎么样我不知道,先包好馄饨下锅再说。但馅料包太多,煮的时间短呢,馅还没熟,煮久一点呢,全散了,看着一锅白白绿绿的汤水,我只能抬头不让眼泪掉下来�?/span>

我今天要分享的这个馄饨馅调制 *** ,是我尝试了好几个视频介绍的 *** ,操作下来觉得这个 *** 做出来的味道是更好吃的�?/span>
之前的馄饨存货正好吃完了,所以今天再包点�?/span>
来,和我一起做一下吧�?/span>
材料�?/span>
1、二八肥瘦的猪后腿肉,你想多包点馄饨,那肉就多一点,想少包一点,肉就少一点,主打一个随意�?/span>
2、适量的盐、糖、胡椒粉,小苏打,玉米淀粉、水、葱油、麻油、食用油、荠菜(或其他蔬菜)
步骤�?/span>
1、把肉拿出来,肥肉瘦肉分开,这块肉大概700克左右:

2、先把肥肉剁碎,我图省力,用的是料理机,料理机品牌是KitchenAid(凯膳怡),手剁的话肥瘦肉不用分开一起剁就好了�?/span>

肥肉打碎一点,到这种程度就差不多了

肥肉倒出�?/span>
�?/span>
同样把瘦肉也打碎,,程度比肥肉颗粒要大一点�?/span>
�?/span>
3、把打(剁)好的肥瘦肉搅拌一下,根据肉量加入适量盐,一点点糖,适量胡椒粉,朝一个方向开始搅拌到肉质粘稠上劲。我又为了省力,用了厨师机(厨师机品牌:松下�?/span>
�?/span>
�?/span>
4、搅拌一段时间后加入2克左右的食用小苏打,再搅拌�?/span>
�?/span>
5、两勺玉米淀�?三勺�?两勺葱油,搅拌均匀,然后倒入肉馅内,再开始搅拌(手动搅拌一定要顺着一个方向)
�?/span>
葱油可以自己熬制�?0克生�?0克葱�?0克大�?50克洋葱打碎,锅里倒多一点的油,冷油里倒入葱姜蒜洋葱碎开始小火慢慢熬,熬到变成金黄色的就可以了,这个葱油可以拌面可以烧菜,都很好吃,密封放冰箱里可以用挺长时间�?/span>
之前做的用完了,今天图方便,就用这个替代一下,山姆超市买的,很好吃�?/span>
�?/span>
这时候肉馅就已经调好了(忘记拍照了),这个肉馅,可以包小馄饨,也可以做油面筋塞肉,还可以做肉包馅,等等等等�?/span>
姐姐弟弟蔬菜吃的少,所以我准备里面再加点荠菜(还可以加香菇、虾肉等等都可以,你爱吃什么加什么)。焯水控干水分,我又懒的剁了,还是用料理机打碎(感谢科技让我在厨房里轻松了不少)

料理机用完后也不用洗,洗碗机来帮忙,所以可以用机器替代的活,就交给它们去干吧:

6、把打碎的荠菜倒入肉馅里,加入适量麻油

适量食用油,再朝一个方向疯狂搅拌,嗯,想要肉馅Q弹好吃,搅拌上劲是关�?/span>,很锻炼臂力,我臂力不好,就借助机器了�?/span>
�?/span>
7、荠菜肉馅完工。对了,对盐控制量不太好把握的姐妹,记得盛出前尝一下咸淡,淡了加点盐,咸了。。。要不再加点菜?为了避免这种尴尬,记得一开始盐不要加太多哦�?/span>

还没包,光这盘馅料就很香�?/span>
包了这样的三�?/span>

今天做肉馅所以耽误做午餐了,看了下冰箱有剩饭,就做一个简单的肥牛炒饭吧�?/span>
1、肥牛绰一下水,起锅放一点点油,把肥牛倒进去炒,加点盐和生�?/span>

2、肥牛八九分熟了后把冷饭倒进�?/span>
�?/span>
3、炒均匀就可以出锅了

还做了个牛肉丸裙带菜�?/span>

牛肉丸也是山姆买的,配料还算干净

把饭盛在碗里,再倒扣到盘里,让简单的炒饭增加一点仪式感☺️
