【鸡蛋葱花饼】

面皮:普通面粉400克、食盐5克、温水200克、凉水100克、食用油20克。

油酥:面粉30克、食用油30克、食盐2克。

葱花蛋液:鸡蛋4个、适量的葱花、食盐2克。

具体 *** 步骤:

步骤一:面盆中加入400克普通面粉,加入5克食盐来增加面粉的筋性,食盐与面粉混合均匀。

步骤二:混合的面粉从中间分成两半,一半用200克的开水烫面,另一半有100克的凉水和面,最后把两种面絮混合,充分搅拌在一起;

步骤三:然后加入20克的食用油,用手揉成面团,揉好的面团非常的软,有一点点的粘手,最后在面团的表面刷上一层食用油,盖上保鲜膜,醒发1个小时,醒发后的面延展性非常的好;

步骤四:接下来调一个油酥,碗中加入30克面粉和2克盐,将30克的食用油烧热浇入面粉中,再将其充分搅拌均匀;

步骤五:案板上刷一层薄油,把面团放在上面,不用揉,直接搓成长条,再分成大小均匀的4个面剂子;

步骤六:取一个面剂子,先用手直接按压,再用擀面杖擀开,擀开后加上适量的油酥,表面涂抹均匀;

步骤七:然后把它卷起来,再卷一次,卷成圈;

步骤八:做好后盖上保鲜膜,再次醒发10分钟;

步骤九:碗中打入4个鸡蛋,放入适量的葱花和2克的盐,搅拌均匀;

步骤十:取一个醒好的面团,先用手按平,再用擀面杖擀开,稍微薄一点就可以了;

步骤十一:电饼预热后刷一层油,把饼胚放进去,盖上盖子,用大火烙半分钟左右翻面;

步骤十二:这个时候倒上适量的葱花蛋液,用刷子抹开,大约半分钟左右翻面,再抹上葱花蛋液,稍微凝固后翻面再烙个十几秒钟就可以出锅了。
