酸菜鱼这样做超好吃,酸辣爽口,鱼肉嫩滑,汤汁更鲜美,非常过瘾酸菜鱼也称为酸汤鱼,是一道源自重庆的经典菜品。酸菜鱼主要以草鱼为常用食材,配以老坛泡酸菜,泡辣椒和炮姜为辅料烹制而成。口感酸辣可口,鱼肉中含有优质的营养,能提供人体所需的蛋白质,矿物质等营养。而且酸菜中,含有的乳酸可以改善胃肠道功能,令人食欲大增。
嫩滑爽口的酸菜鱼
接下来我就把这道,具有重庆本地特色的酸菜鱼 *** *** 分享给大家。
【做法及步骤】
1.新鲜草鱼一条,去除鳞片,内脏和鱼鳃,刮干净鱼腹中的黑膜再洗净。

2.从鱼尾2指处下刀延脊骨片下鱼肉,切下鱼头剁开,去除鱼的牙齿(鱼的牙齿非常腥)和剁好的鱼骨一起放入盆中。鱼肉片下腹排,再斜刀片成鱼片。最后放入有鱼骨的盆中,加1勺盐,料酒抓匀,再用清水冲洗净血水捞出挤干多余的水分。

3.鱼骨和鱼片分开腌制,鱼骨中放入适量盐,料酒和胡椒粉拌匀腌制15分钟即可。鱼片中放适量盐,料酒和胡椒粉,用手抓至粘手,接着再打入一个蛋清,放入适量干淀粉抓匀同样腌制15分钟即可。

4.准备好的泡椒切碎,干辣椒切节,老坛酸菜切小块,老姜切片,大蒜一半切颗,一半剁成末,小葱切葱花备用。

5.锅里油烧热,下姜片,蒜颗,干辣椒和花椒爆香,再放入酸菜中小火翻炒,翻炒酸菜表面变干,再放入鱼骨翻炒均匀。

6.接着倒入准备好的开水或者高汤,再放入胡椒粉,白糖,鸡精调味。最后中火熬煮5分钟左右,至鱼骨断生用漏勺捞出放入盆中垫底。

7.关小火把鱼片一片一片的展开放入锅中,接着开中小火煮至鱼片断生,再放入适量白醋即可起锅装入盆中。

8.锅中烧油,油温8成热,倒入干辣椒和蒜末炸香,并快速泼入盆中。

9.最后撒上葱花点缀即可。
