之所以说这道菜特别,是因为其烹饪 *** 与常见的手法都不同。做这道菜不需要保留鱼头,要把鱼头连同肚子里的肠子一同去掉。

【黄辣丁焖肉准备食材】
主料:黄辣丁2条、瘦肉200克、香菇30克、鸡蛋清30克
准备调料:
葱13克、生抽5克、胡椒粉1克、料酒5克、鸡精2克、糖3克、淀粉10克、蒸鱼豉油5克、食用油半汤勺
【黄辣丁焖肉 *** 步骤】
一 去除内脏
准备两条大一些的黄辣丁,放入盆中倒入清水。左手戴上一只手套,防止抓鱼的时候被刺伤。用手捞出一只黄辣丁,拿刀切掉背部和两侧的鱼刺,将其放入另一个盆中。
重复这一步骤,把另一条鱼的刺也去掉。左手抓起一条黄辣丁拿一把干净的剪刀,将黄辣丁的鱼头剪掉。
剪掉鱼头后再用剪刀稍微剖开一些肚子,伸进剪刀头挑出里面的内脏。注意在挑出内脏的时候不要弄破苦胆,挑出内脏后用清水冲洗一下鱼,去除多余的血水。
然后将这两条黄辣丁放在一个漏盆中,控水备用。挑出去的内脏当中如果有鱼泡和鱼籽也不要浪费,冲洗干净冷冻起来留着下次炖鱼时用。
二 塞入肉馅
处理好黄辣丁后接下来就是要 *** 美味的肉馅了,这里我们要使用200克的猪瘦肉为原料。把猪瘦肉去皮冲洗干净切成小块,放在料理机里搅碎成肉馅。
搅的时候转速不要太快,要让肉保持颗粒感,这样吃起来有嚼劲。搅好肉馅后,把肉馅放入一个小盆里。
准备30克香菇冲洗干净切碎一些撒入其中,再把5克的葱切成圈放入里面,这样肉馅蒸熟后会有一股清香味。
盆里倒入生抽5克、胡椒粉1克、料酒5克、鸡精2克、糖3克,用筷子搅拌一下起到去腥提鲜的效果。
在一个大碗里打入约30克的鸡蛋清,用筷子打散后均匀浇在肉馅上。再顺时针搅拌肉馅一分钟,然后逆时针搅拌肉线一分钟使鸡蛋清与肉馅完全融合。
撒上10克的土豆淀粉或红薯淀粉用筷子搅拌2分钟,这样蒸熟后的肉馅吃起来不发散很筋道。
搅拌完成,用勺子把肉馅塞入黄辣丁的肚子里。
三 蒸熟浇油
蒸锅底部加入足量的清水,盖上盖子开大火烧开。准备一个盘子,把加好肉馅的黄辣丁放在盘子上然后放在蒸屉里。
当锅中的水烧开后把盖子打开,将蒸屉放上去盖上盖子。继续用大火烧水蒸黄辣丁12分钟,此时的黄辣丁就熟透了。
这时就可以关火戴上手套将锅中的黄辣丁端出,稍微侧着控一下水放在桌子上。
浇入5克蒸鱼豉油,切上8克葱丝均匀撒在上面配个色。
炒锅中加入半汤勺的食用油,大豆油花生油皆可。开中火烧至油微微冒烟等上一分钟,关火端起热锅把油均匀浇在鱼上面。
刹那间香气弥漫在整个屋子,稍微晾一下你就可以品尝这道软嫩香滑的美味了。相信吃完这道菜后你会改变对淡水鱼刺多味道腥的看法,从此爱上吃淡水鱼。
【黄辣丁焖肉技术总结】
1 黄辣丁身上的刺非常厉害,如果被扎伤很容易感染引起伤口肿胀。所以在抓黄辣丁时,建议大家带上胶皮手套。
2 用剪刀掏鱼肠子的时候小心一些不要弄破苦胆,如果害怕刺破,则可以用手指将鱼的肠子掏出。
3 黄辣丁放入肉馅后要开水上锅蒸,假如冷水蒸熟那么肉水分含量太多吃起来会发面不够滑嫩。
